Vegetarian Monsters

Vegetables are magical. Ever heard of Jack and the Beanstalk? Yup, that's what I thought. Anywho, tonight was vegetarian night for me and the momster (the boys practically survive on solely meat so they did not accept our invitation for dinner). We made veggie quesadillas and they were by far the most amazing thing that I have ever whipped up. I first made a quesadilla in home ec in the sixth grade and it was fantastical. Who knew you could make such a cheesy delicious dinner with only a tortilla and shredded queso? I didn't, that's for sure. Sometimes sixth grade home ec really pays off...sometimes.

Very Veggie Quesadillas

Yields 2 servings



1/4 cup chopped red bell pepper
1/4 cup chopped red onion
1 small mushroom, chopped
1/4 cup chopped zucchini
grated cheese (as much or as little as you would like)
2 tortillas.

Heat a flat pan on medium high heat, grease with either cooking spray or olive oil.
Cook veggies (start with zucchini, bell peppers, and onions. Add in mushrooms once onion is nearly translucent ~5 minutes). Remove from pan and place in a bowl.

Re-spray pan with cooking spray or olive oil, add tortilla. Spread half of the cooked veggie mixture on one side of the tortilla and sprinkled with cheese. Fold tortilla in half. Cook for about 5 minutes on each side, or until crunchy.

Repeat with other tortilla.
Cut with pizza cutter into 3 triangles and serve!



Very delicious with salsa or sour cream :)
